Been working on this for a little while (Episode VII bug has got me too).
It's a Corellian YT-series ship that's sort of a Falcon/Outrider hybrid. 32m long, 38m wide, it's somewhat larger than the Falcon or the Outrider.
Decided to call it the Corellian Hawk.

But I would have assumed that the "next one up" in the series would retain the mandibles from the Falcon/YT-1300.

I was actually considering kitbashing this design into the Falcon configuration after it's finished. Integrating mandibles into the rounded saucer edge will be an interesting design challenge. Obviously it would lose the starboard side wing section....
Yeah, I think that would be necessary to make it look good. Like you said, it would be a design challenge to incorporate them.
Man, even though you're not building the Outrider exactly, this is putting me in the mood for Shadows of the Empire. I may have to dig out my Nintendo 64 and play the game.
They act as movement constraints for the engine thrust nozzles. In Haines they say they are "Fuel drive pressure stabilizer"
Haines Millennium Falcon book, page 71.
Yeah, that was probably the kitbashing at work more than worrying about making it functional. "Put that there... yeah, that looks good."
